SALAD OLIVIER

2 cups cooked chicken, diced

3 potatoes, boiled and diced

3 hardboiled eggs, diced

2 dill pickles, diced

1 tomato, diced

1 cucumber, peeled and diced

1 Tbs dried dill to taste

1 cup mayonnaise (or ½ mayo and ½ sour cream)

Garnishes: sliced green onions, black olives

In a large bowl, lightly toss all ingredients except

garnishes, being careful not to mash the ingredi-

ents. Add more mayo or sour cream if necessary

to make a moist, creamy salad. Mound on a serv-

ing plate and garnish. Serves 6. Maybe a light sup-

per?

OPEN SESAME CHICKEN

¼ cup (½ stick) melted butter

Juice of 1 lemon

1/3 cup freshly grated parmesan cheese

1/3 cup breadcrumbs

1 3-pound chicken (cut into serving pieces),

skinned

2 Tbs (¼ stick) melted butter

Paprika

Sesame seeds

Preheat oven to 325 degrees. Grease 2-quart

rectangular baking dish. Combine ¼ cup melt-

ed butter with lemon juice in shallow bowl. Mix

cheese and breadcrumbs in shallow dish. Dip

chicken pieces in butter mixture and then roll in

breadcrumbs, coating well. Arrange in single layer

baking dish. Drizzle remaining butter over chick-

en. Sprinkle generously with paprika and sesame

seed. Bake for 1 hour, basting frequently (cov-

er dish with foil if chicken browns too quickly).

Makes 4 servings.

. (The Conference) were elected at the 113th Annual

Meeting. The event was held March 1-2, 2017, at the Omni

Hilton Head Oceanfront Resort in Hilton Head, SC.

Edward Muhleisen

was

elected president. He pre-

viously served as Vice Pres-

ident of the organization

in 2015 and 2016. He was

elected District 7 Director

in 2014, representing funeral

service regulators from Loui-

siana, New Mexico, Oklaho-

ma, and Texas.

Mr. Muhleisen graduat-

ed from Holy Cross High

School, New Orleans, in

1995; received a bachelor’s

degree in business adminis-

tration from Louisiana State

University in 2000; and

stitute of Funeral Service

in

2002. While attending Dal-

las Institute of Funeral Ser-

vice, he was employed by

Restland Funeral Home

in Dallas and

Thompson’s

Harveson & Cole Funeral

Home

in Fort Worth, TX.

Mr. Muhleisen became li-

censed as an embalmer/fu-

neral director by the State

of Louisiana in 2003 and

as a licensed Crematory

Retort Operator in 2012.

He represents the fifth generation of the Muhleisen fam-

ily in funeral service. Muhleisen presently is the manag-

er of his family firms,

LaPlace, LA and

Magnolia Crematory

in Kenner, LA. He

has served on the Louisiana State Board of Embalmers and

Funeral Directors since 2013.

Sandy Sebastian

was elected Vice President. She was elect-

ed to her first term on The Conference Board of Directors in

2016 after previously completing her predecessor’s term in

2015. As District 5 Director she will continue to represent

funeral service regulators from Arkansas, Illinois, Kentucky,

Missouri, and Tennessee. She is the Executive Director of the

State Board of Embalmers and Funeral Directors and State

Board of Podiatric Medicine for the state of Missouri.

Ms. Sebastian has spent over 30 years within the same

organization, Division of Professional Regulation, work-

ing in various capacities that included licensure and reg-

ulation. Her previous roles included Director of Human

Resources and Operations Coordinator for the Division of

Professional Regulation.

Mark Ransford

was elected Secretary/Treasurer. He was

also elected to his first term as District 4 Director, having pre-

viously completed the term left by his predecessor in 2015. As

District 4 Director, Mr. Ransford represents funeral services

regulators from Indiana, Michigan, Ohio, and Ontario.

Mr. Ransford is a 2002 graduate of the University of Mich-

igan with degrees in Business Administration and Psychol-

ogy. He received his Mortuary Science degree at Wayne State

University where he also received a graduate degree in Foren-

sic Investigation. Mr. Ransford serves on the Michigan Board

of Examiners in Mortuary Science and is a past president of

Michigan Funeral Directors Association

District 7.

Blair Nelsen

, CFSP, was elected District 2 Director. He

represents funeral service regulators from Delaware, Mary-

land, New Jersey, Pennsylvania, Virginia, West Virginia,

and Washington DC. He is serving his third term on the

Virginia Board of Funeral Directors and Embalmers and is

a past president of the Board.

Mr. Nelsen is a fourth generation funeral director cur-

rently serving as Director, Governmental Affairs, Eastern

Region of

SCI Management

. Prior to joining SCI, Nelsen

grew his family business from one to six locations, serv-

ing families throughout Virginia. He is a Past President of

Preferred Funeral Directors International

and was recently

elected to his third term as a Director of the

International

Cemetery, Crematory and Funeral Association

.

Mr. Nelsen holds a Bachelor of Arts in Russian Studies from

the University of Virginia, a Master of Aeronautical Science

fromEmbry-Riddle Aeronautical University and an Associate

of Funeral Science from

JohnTyler Community College

. He is a

former KC-135 Air Force pilot and instructor pilot.

Charles Perine

, CFSP, was elected District 3 Director. He

was appointed toThe Conference Board of Directors in 2016

to complete a term left by his predecessor. As District 3 Di-

rector, he represents funeral service regulators from Alabama,
