ZUCCHINI WITH PESTO SAUCE
6 small zucchini, cut julienne
Salt
Pesto Sauce:
2 cups chopped fresh basil
½ cup olive oil
3 Tbs pine nuts
2 garlic cloves
1 tsp salt
1 cup freshly grated parmesan cheese
2 Tbs (¼ stick) butter, room temperature
Lightly salt zucchini in colander and let drain for 30
minutes.
Puree next 5 ingredients in processor or blender.
Transfer to medium bowl. Add cheese and butter,
mixing well.
Melt butter in large heavy skillet over medium-high
heat. Add zucchini and sauté until heated thoroughly.
Add sauce and toss, mixing well. Serve hot. Makes 6
servings.
MOROCCAN CHICKPEA SALAD
This simple salad is hearty enough to stand on its own for
a no-cook dinner
3 Tbs olive oil
3 Tbs fresh lemon juice
2 tsp ground cumin
¼ tsp each sea salt and ground black pepper
Pinch cayenne pepper
3 cups BPA-free canned chickpeas (garbanzo beans),
drained and rinsed
1 large carrot, peeled and julienned
3 green onions, thinly sliced
2 plum tomatoes, diced
1 red bell pepper, diced
¼ cup each chopped fresh cilantro and mint
½ cup crumbled low fat feta cheese
In a small bowl, whisk together oil, lemon juice,
cumin, salt, black pepper and cayenne; set aside.
In a large bowl, combine chickpeas, carrot, onions,
tomatoes, red pepper, cilantro, mint and feta.
Pour lemon juice dressing over chickpea mixture
and toss to combine. Serve immediately or cover and
refrigerate for up to 24 hours.

that the Ronald J. Lett-
ieri Award for Excellence
in Teaching, Mount Ida
College’s highest teaching
honor, was awarded to
Jef-
frey E. Megna
, Chair of
the Funeral Service Educa-
tion Department.
Jeff came to Mount Ida
College as an Adjunct Pro-
fessor in January 2004 and
then became full time in the
spring semester of 2013. In
September 2013, he became
the Chair of the Funeral Ser-
vice Education Department.
According to President
Brown, “Jeff has received ac-
colades from his students,
who span from our tradi-
tionally aged college stu-
dents to career-changers in
their 50s (and beyond). Jeff
is considered an individual
who not only delivers com-
plex course content with
clarity, but also shows empa-
thy and care for his individ-
ual students. His expecta-
tion of his students are high,
and he is known for requir-
ing students to come to class
completely prepared with
readings and other out of
classroom content. ‘Tough
but fair’ are three words that
many of his students have
used to describe his style.”
As indicated by one of his
past students, “The reality
is Professor Megna, while
a practitioner in the funer-
al business, is more impor-
tantly a trained educator.”
His course preparation is
evident, his classroomman-
agement skills are excellent
and as a result, students are
keenly prepared to enter the
field of funeral service as a
result. In addition to his ex-
cellent teaching, Jeff’s com-
mitment to the Funeral Ser-
vice programs is clear, and
this has not gone unnoticed
by his students, who cred-
it Jeff for strengthening the
Funeral Service academic
programs and reputation.
Professor Megna is an
Alumnus of the
New Eng-
land Institute of Applied
Arts & Sciences
, where he
received his Associate in
Science Degree in Funeral
Service. He also has earned
degrees from Rhode Island
College and Cambridge
College and completed
graduate studies at Bos-
ton College, University of
Rhode Island, and Provi-
dence College respectively.

hours of specialized embalming and reconstructive train-
ing at
Fountain National Academy’s
Advanced Post
Mortem Reconstructive Surgery Seminar.
Instructor
Vernie R. Fountain
remarked, “Steve’s par-
ticipation in the seminar is an expression of untiring de-
votion and dedication to the highest standards of em-
balming and post mortem reconstructive surgery care.
It exemplifies a desire to provide continued high quality
professional care for the families served.”
Founded in 1881, Flanner and Buchanan Funeral Cen-
ters owns 17 event facilities throughout Indianapolis –
seven of which are combined with cemeteries.
