SHRIMP AND BLACK BEAN SALAD 1 pound shrimp, cooked and shelled 1 15-ounce can black beans, drained ½ cup celery, thinly sliced 1 small green pepper, cut in strips 2/3 cup mild picante sauce 1/3 cup red onion, thinly sliced 2 Tbs chopped cilantro 2 Tbs oil 2 Tbs honey 1 tsp lime peel; 2 tsp lime juice Lettuce leaves Cherry tomato halves Combine shrimp, beans, green pepper, celery and onion in large bowl. Combine remaining ingredients except tomatoes and lettuce; mix well. Pour over shrimp mixture; toss lightly to coast. Cover and chill 2-24 hours, tossing now and then. Spoon onto lettuce lined plates, garnish with tomatoes. Serve with additional picante sauce. Tip: When celery loses its crispness, place it in a pan of water with raw potato slices for a few hours. When you remove the celery, it will be crisp. SPAGHETTI SQUASH WITH TOMATOES 1 medium spaghetti squash 2 Tbs water ½ cup sliced green onions ½ tsp salt ½ cup red or green pepper, chopped 2 large tomatoes, chopped 2 tsp fresh basil, minced ¾ tsp dill weed 2 Tbs parmesan cheese, grated Cut squash in half lengthwise; discard seeds. Place, cut side down, in baking dish and add hot water ½ inch deep. Cover and bake at 350º for 30-40 minutes, until tender. In a skillet, heat water, then add pepper and onions. Cook and stir for 2 minutes, then stir in tomatoes, parsley, dill, basil, and salt. Bring to a boil, reduce heat and simmer uncovered for 5 minutes, until tender. When squash has cooled, scoop out pulp, separating strands with a fork, and place in large bowl. Add tomato mixture and toss to combine.
