ZUCCHINI WITH PESTO SAUCE Salt 6 small zucchinis, cut julienne Pesto Sauce: 2 cups chopped fresh basil ½ cup olive oil 3 Tbs pine nuts 2 garlic cloves 1 tsp salt 1 cup freshly grated parmesan cheese 2 Tbs (¼ stick) butter, room temperature Lightly salt zucchini in colander and let drain for 30 minutes. Puree next five ingredients in food proces- sor or blender. Transfer to medium bowl. Add cheese and butter, mixing well. Melt butter in a large, heavy skillet over me- dium-high heat. Add zucchini and sauté until heated thoroughly. Add sauce and toss, mixing well. Serve hot. Makes 6 servings. 3 Tbs olive oil 3 Tbs fresh lemon juice 2 tsp ground cumin ¼ tsp each sea salt and ground black pepper Pinch cayenne pepper 3 cups BPA-free canned chickpeas (garbanzo beans), drained and rinsed 1 large carrot, peeled and julienned 3 green onions, thinly sliced 2 plum tomatoes, diced 1 red bell pepper, diced ¼ cup each chopped fresh cilantro and mint ½ cup crumbled low fat feta cheese In a small bowl, whisk together oil, lem- on juice, cumin, salt, black pepper and cayenne; set aside. In a large bowl, combine chickpeas, car- rot, onions, tomatoes, red pepper, cilan- tro, mint and feta. Pour lemon juice dressing over chickpea mixture and toss to combine. Serve im- mediately or cover and refrigerate for up to 24 hours. News Association ContinueD Freytag is president and CEO of Spring Grove Cem- etery and Arboretum in Cincinnati, OH . He holds a bachelor’s degree in economics from Dartmouth and an MBA from the Harvard School of Business. Pre- viously in his career, Freytag was the president of In- formation Alternatives, a Cincinnati based technol- ogy consulting company. Prior to that, he served as treasurer of Eagle-Picher, a public diversified manu- facturing company. His other business experience in- cludes manufacturing, management consulting and venture capital. Since joining the deathcare profession and the IC- CFA, Freytag has become a Certified Cemetery and Funeral Executive (CCFE) and has been very active in the association. He has spoken at a variety of in- dustry events including the ICCFA Fall Manage- ment Conference, Wide World of Sales, ICCFA An- nual Convention, and the OACFP. He has served as an ICCFA board member, on the strategic planning committee, the finance committee, as treasurer and as president-elect. He is the dean of the College of Leadership, Administration and Management at IC- CFA University. When asked about his term as ICCFA president, Freytag said, “I am deeply honored to serve. It is a daunting task, but I am very excited and optimis- tic about what the coming months will bring for our profession. Often the greatest challenges we face in life become our greatest learning experiences.” Freytag is also an active member of Cemetery Coun- cil, Death Care Management Council and the Historic Cemetery Alliance.
