Puree basil, oil, pine nuts, garlic and salt in processor or blender. Transfer to medium bowl. Add cheese; mix well. Melt butter in large heavy skillet over medium-high heat. Add zucchini and sauté until heated thoroughly. Add sauce and toss, mixing well. Serve hot. Makes 6 servings. Good Eating! MOROCCAN CHICKPEA SALAD This simple salad is hearty enough to stand on its own for a no-cook dinner 3 Tbsp olive oil 3 Tbsp fresh lemon juice 2 tsp ground cumin ¼ tsp sea salt ¼ tsp ground black pepper Pinch cayenne pepper 3 cups (2 cans) BPA-free canned chickpeas (garbanzo beans), drained and rinsed 1 large carrot, peeled and julienned 3 green onions, thinly sliced 2 plum tomatoes, diced 1 red bell pepper, diced ¼ cup chopped fresh cilantro ¼ cup chopped fresh mint ½ cup low fat feta cheese, crumbled In a small bowl, whisk together oil, lemon juice, cumin, salt, pepper and cayenne; set aside. In a large bowl, combine chickpeas, carrot, onions, tomatoes, bell pepper, cilantro, mint and feta. Pour lemon juice dressing over chickpea mixture and toss to combine.
