This is the best chocolate cake ever, and just in time for Valentine’s Day! TEXAS STYLE GERMAN CHOCOLATE CAKE Cake: ½ cup buttermilk 1 tsp baking soda 2 cups flour 2 cups granulated sugar 4 ounces German’s sweet chocolate 3 Tbsp cocoa 1½ cups (3 sticks) butter 1 cup water 2 eggs Preheat oven to 400º. Combine buttermilk and baking soda and set aside. Sift together flour and granulated sugar. In a saucepan, melt together chocolate, cocoa, butter and water; bring to a boil. Remove fromheat and add eggs, then the flour and sugar mixture, and lastly the buttermilk and soda mixture. Let batter stand for 5 minutes while you grease and flour an oblong cake pan. Bake at 400º for 20 minutes. Topping: ½ cup (1 stick) butter 3 Tbs milk 2 ounces German’s sweet chocolate 2 tsp cocoa 1 pound powdered sugar While cake is baking, in the same saucepan, melt together butter, milk, chocolate and cocoa. Bring to a boil and remove from heat. Add powdered sugar and beat until creamy. Pour over the hot cake and enjoy! Good Eating! SHRIMP AND BLACK BEAN SALAD 1 pound shrimp, cooked and shelled 1 15-ounce can black beans, drained ½ cup celery, thinly sliced 1 small green pepper, cut in strips 2/3 cup mild picante sauce 1/3 cup red onion, thinly sliced 2 Tbsp chopped cilantro 2 Tbsp oil 2 Tbsp honey 1 tsp lime peel, 2 tsp juice Lettuce leaves Cherry tomato halves Combine shrimp, beans, green pepper, celery and onion in large bowl. Combine remaining ingredients except tomatoes and lettuce; mix well. Pour over shrimp mixture; toss lightly to coat. Cover and chill 2 to 24 hours, tossing now and then. Spoon onto lettuce-lined plates; garnish with tomatoes. Serve with additional picante sauce. Due to the pandemic and the cancelling of the 2021 ICCFA Annu- al Convention, the Educational Foundation postponed presenting the award until they were able to gather and honor Boetticher in person. Jeff Kidwiler, CCE, CSE, is the current chancellor of the ICCFA University and an ICCFA past president. In his role as chancellor, he has focused on expanding and refining the education that students receive each year at ICCFA University. He has been an active member of the ICCFA for more than 20 years. Kidwiler has worked in many facets of the deathcare profession and currently serves as president of Blackstone Memorial. The ICCFA Educational Foundation, founded in 2005, seeks to make education accessible to the future leaders of the deathcare profession. It does this by awarding schol- arships to the educational programs of the International Cemetery, Cremation and Funeral Association, as well as ad- vancing initiatives designed to promote the profession and support the individuals who answer the call of service. Founded in 1887, the International Cemetery, Crema- tion and Funeral Association is the only international trade association representing all segments of the ceme- tery, cremation, funeral and memorialization profession.
