Soak chicken in buttermilk for 4 hours. Mix dry ingredients together and coat marinated chicken. Brown chicken in butter and peanut oil, then bake for 50 minutes at 375º. Good Eating! BAKED SWISS STEAK 2 pounds round steak, 1-inch thick 1/3 cup flour ¼ cup oil 1½ tsp salt 1/8 tsp pepper 2 onions, sliced ½ cup white wine 1 1-pound can tomatoes Salt and pepper 1 tsp Worcestershire sauce Trim fat from steak and cut into serving size pieces. Pound flour into both sides of steaks. Heat fat in skillet and brown steaks. Place steaks in single layer in baking dish, cover with onion slices, and season with salt and pepper. In the skillet, heat tomatoes, loosening brown bits from bottom of skillet. Add Worcestershire sauce, season with salt and pepper, then add wine to skillet. Pour heated mixture over steaks, cover and bake at 350º for 2-2½ hours, or until fork-tender. Makes 6 servings. The Funeral Service Foundation Marks 20 Years of Academic Scholarship Support Selected Educational Trust Announces Second-Career Scholarships to be Awarded NEWS Educational CONTINUED BROOKFIELD,WI— The Funeral Service Foundation is marking its twentieth year of awarding academic scholarships. Up to 35 scholarships ranging from $2,500- $5,000 were available to current students of funeral service and military veterans who met the eligibility criteria. The Foundation offered its first academic scholarship, the Joseph E. Hagan Memorial Scholarship, in 2002. In the two decades since, additional scholarships were established in memory of Shipley Rose Buckner and Dennis Schoepp, and in honor of Steve Lang and Bob Horn. Memorial Classic Scholarships are funded by tournament proceeds from the annual golf event, and Foundation ’45 Scholarships are awarded in recognition of the Foundation’s founding year, 1945. The Foundation also promotes the Brenda Renee Horn and Steve Mack Memorial Scholarships in partnership with the SCI National Scholarship Program. Upon the announcement of the scholarship recipients this month, the Funeral Service Foundation will have awarded nearly $660,000 in academic scholarship support to 267 outstanding students of funeral service since 2002. “Our academic scholarship program has grown exponentially in size and scope over the last two decades, because our donors and board believe that a solid education is the gateway to a fulfilling career in funeral service,” said Funeral Service Foundation Executive Director LeeWiensch, CAE, CFRE. “We look forward to impacting the educational experience of the next generation of funeral service leaders as we enter into a third decade of scholarship support.” Applications will be available in 2023 from February 1-April 15, and September 15-November 1. Those who have applied in the past but have not been awarded an academic scholarship from the Foundation are encouraged to re-apply.
