Simmer until noodles are tender. Remove bay leaves. Serve with French bread and…enjoy! SPAGHETTI SQUASH WITH TOMATOES 1 medium spaghetti squash 2 Tbs water ½ cup green onions, sliced ½ cup red or green pepper, chopped 2 large tomatoes, chopped 2 Tbs minced parsley ¾ tsp dill weed ½ tsp salt 2 tsp minced fresh basil 2 Tbs grated parmesan Cut squash in half lengthwise; discard seeds. Put cut side down in baking dish. Add hot water ½” deep. Cover and bake at 350º for 30-40 minutes, until tender. In a skillet, heat water; add pepper and onions. Cook and stir for 2 mins; stir in to- matoes, parsley, dill, basil and salt. Bring to boil, reduce heat and simmer uncovered for 5 minutes until tender. When squash is cool, scoop our pulp separating strands with a fork; place in large bowl. Add tomato mixture and toss to combine.
