Crumble turkey over mixture and mix well. On a sheet of waxed paper, pat turkey mix- ture into a 12” x 8” rectangle. Sprinkle with spin- ach and cheese. Roll up jelly roll style, starting with a short side and peeling waxed paper away while rolling. Seal seam and ends. Place seam side down in a 15” x 10” baking pan coated with nonstick cooking spray. Bake, uncovered at 350º for 50-60 mins or until a meat thermometer reads 165 de- grees. Let stand for 5 minutes before slicing. Heat remaining spaghetti sauce and serve over turkey. BAKED VEAL STEW 1 Tbs olive or salad oil 1 Tbs butter 2 lbs boned veal shoulder, cut into 1” pieces ½ lb mushrooms 2 Tbs flour ¾ tsp salt 1/8 tsp pepper 1 cup chicken bouillon 1 lb small white onions 1 cup white wine 1 bay leaf 1-2 sprigs parsley, finely chopped Heat oil and butter in skillet and brown veal well. Meanwhile, pour some hot water over mushrooms 2 or 3 times (if mushrooms are small, leave the stems on) and drain. When veal has browned, place in a 3-quart casserole. Preheat oven to 325º. Into fat left in skillet, stir in flour, salt, pepper; gradually stir in bouil- lon; cook, stirring until thickened. Pour over veal. Add onions, wine, bay leaf and parsley. Bake covered for 1½ hours or until mush- rooms are tender. Sprinkle parsley over top. Makes 4 servings. Memoires des choix des Jacque Good Eating! Dodds joined the profes- sional staff of Conroy-Tully Walker in 2015. Since that time, she has earned a repu- tation for providing excellent care to families. Dodds, a great asset to her firm, serves with compassion and care. She is continually seeking ways to grow and improve in her techniques, procedures and personaliza- tion – for her firm, her clients and her profession. Upon winning this scholarship, Dodds toldTrust staff, “It is such an opportunity to have something like this available to me and to have an avenue where people come together and learn from one another as well as their instructors. But most- ly getting the scholarship for this program will enable me to learn how funeral service practices and procedures are done differently around the country as well as within the industry.” Dodds graduated from Mount Ida College having attained her degree in funeral home management. She is a native of Rye, NH and currently resides in South Portland. Dodds enjoys running, reading and spending time with family and friends. The scholarship will cover Dodds’ registration fee for the two-year term of the 2019 Leadership Academy class. She will also receive an annual stipend to assist with the cost of books, fees and related-expenses. The total estimated value of this scholarship is $4,890. STERLING,VA— The International Cemetery, Crema- tion and Funeral Association’s (ICCFA) Educational Foundation will present its 2019 Lasting Impact Award to Ernie Heffner, CFuE, during the ICCFA Annual Con- vention and Exposition, April 2–6 in Charlotte, NC. Heffner is a second-generation funeral director who be- gan his career after graduating from the Pittsburgh Insti- 2012. In 2012, Heffner was appointed as the chancellor of the ICCFAU, which he oversaw for over two years. Jim Price, president of the ICCFA Educational Foun- dation stated, “The success of the Heffner Funeral Homes business is the long-term result of exceptional people working with a sincere commitment to providing quality services to their communities. Ernie’s businesses have continued to grow based on successfully maintain- ing a focus introducing customer service enhancements that are always personal, meaningful and intentional.” Price added, “On a personal note, I have been a good friend of Heffner’s for nearly 20 years. I’m not aware of any one person active in our profession today that has made greater impact in areas of mentoring, coaching, veteran recognition, advocating cremation standards and advancing the Celebrant training movement in end-of- life care.
