To simplify: Use a can of mushroom soup in place of the mushrooms and cream and canned luncheon meat in place of ham. MONTE CRISTO SANDWICH 2/3 cup eggs or egg substitute 1/3 cup fat free milk 4 slices cooked turkey bacon 4 slices cooked ham 4 slices Swiss cheese 8 slices white bread Salt and pepper to taste 1½ tsp powdered sugar Combine eggs, milk, salt and pepper in a shallow dish. Place one slice each of turkey, ham and cheese on 4 bread slices. Top with remaining bread slices. Dip both sides of each sandwich into the egg mixture. Place sandwiches in a large skillet coated with cooking spray over medium high heat. Cook 3 minutes on each side until sandwiches are golden. Sprinkle with powdered sugar. Serve sandwiches with sauce. Sauce: Combine ¼ cup red currant jelly, 2 Tbs Dijon mustard, 1 Tbs orange juice and 1 Tbs water in small saucepan over low heat. Cook until jelly melts. NEWS Association CONTINUED League Baseball player Andre Dawson will share about his baseball career, stories about players and coaches he has worked with, teamwork and leadership, and how he got into the funeral business during presentation. In From Park to Parlour: Andre Dawson’s Journey to the Funeral Game, Andre will draw on his experience related to community building, funeral home ownership, and issues facing today’s funeral director. Dawson’s accolades include Rookie of the Year, Gold Glove (x8), Silver Slugger (x4), All-Star (x8), and MVP. After a decade of stardom with the Montreal Expos, he signed with the Chicago Cubs where he hit his incredible 20-year career with the Florida Marlins. Andre retired in 1996 and was inducted into the Hall of Fame in 2010. He has since invested his career earnings, and commitment into restoring a funeral home in the neighborhood where he grew up and now owns and operates Paradise Memorial Funeral Home in Miami, FL. Although folks in the neighborhood are aware of Andre’s fame, he prefers to work behind the scenes. He transports bodies, cleans the facility, and oversees preparations-even those of COVID patients. Carmen is a former Seattle police chief and spent 28 years transforming the Seattle police force from an institution where minorities and women historically struggled to succeed to a force more representative of the city’s diversity. On Thursday May 18, Chief Carmen Best will present Diversity and Inclusion. Chief Carmen has been recognized with dozens of awards for her contributions to community engagement, public safety, gender equity, diversity, and inclusion. Most notably, she received the “Newsmaker of the Year” award from the Seattle Black Press and was awarded the prestigious Ellis Island Medal of Honor, dedicated to recognizing individuals who selflessly contribute to society and uphold the ideals of America.
