We’ll use lamb, instead of “sheep”!!! IRISH STEW 1½ lbs lamb stew meat 4 cups water 1 medium onion, sliced ½ cup cubed turnip 2 Tbs flour ½ tsp each dried thyme, marjoram and rosemary, crushed ½ tsp pepper 1 tsp salt 2 tsp olive oil 2 cups potatoes, peeled and sliced ½ cup carrots, sliced 2 Tbs fat-free milk 3 Tbs minced parsley In a Dutch oven, brown lamb in oil over medium heat. Add water; bring to a boil. Cover and simmer for 1 hour. Add potatoes onion, carrot, turnip and seasonings. Bring to a boil. Cover and simmer for 30 minutes or until vegetables are tender. In a small bowl, combine the flour and milk until smooth; stir into stew. Add parsley. Bring to a boil; cook and stir for 2 minutes or until thickened. ROAST POTATOES WITH WINE AND ONIONS 2 Tbs olive oil 1-2 large onions, sliced 3 cloves garlic, sliced 10 small red potatoes ½ tsp salt Freshly ground black pepper to taste 1 cup white wine 1 Tbs chopped parsley (optional) Preheat oven to 450º F. Heat the olive oil over moderately high heat in an ovenproof roasting pan or skillet that is just large enough to hold the potatoes in a single layer. Add the onion and garlic and sauté until the onion softens, about 3 minutes. Add the potatoes, salt and pepper. Sauté for 5 minutes, then add the wine and transfer the pan to the oven. Bake, uncov- ered, until the potatoes are tender, and most but not all of the wine has evaporated, about 35 minutes. When potatoes are cool enough to handle, cut them in half. To serve, reheat the potatoes and onions and toss with parsley. Makes 4 servings. Memoires des choix des Jacque Good Eating!
